Meet our Executive Chef Ryan Forte
Chef Ryan Forte’s devotion to serving people food they love seems to be in his DNA. His father ran a pizzeria, and young Ryan accepted the challenge of making the homemade pasta. As he interacted with his dad and the restaurant’s customers, he learned the importance of creating menus using fresh ingredients and developed a passion for flavor innovation.
After earning his culinary and applied science degree as a member of Johnson & Wales’ first Charlotte graduating class, his resume and skills grew rapidly. In addition to serving as a chef for the Westin Hotel’s Ember Grill, he was both executive chef and general manager at Braswell’s restaurant.
Today, as an active member of the Piedmont Culinary Guild, Ryan continues Southminster’s tradition of creating menus that use the freshest locally sourced ingredients, many grown in our own garden. With menus that change daily and offerings made from scratch, he leads a highly accomplished culinary team dedicated to providing residents of Southminster the finest dining experience.
Meet our Chef de Cuisine Phillip Platoni
Growing up in Richmond, Virginia, Phillip has had a love of cooking for as long as he can remember and remembers fondly helping his grandmother cook in the kitchen at a very early age. As soon he was able to, he got a job in the culinary industry where he quickly moved up to kitchen manager, then assistant manager by the age of 19. After two years of management, where he learned much of the business, he decided to try his hand at different aspects of the industry. For the next 6 years he tended bar, was a short-order cook at a 24 hour diner, was a server at a boutique hotel, and even tossed pies at a New York Pizzeria. In October of 2005, on a whim, he decided to move to Charlotte to attend culinary school at The Art Institute of Charlotte. While attending school Phillip logged over 100 hours of volunteer hours, including a two week trip to New Orleans with Culinary Corps to help the victims of Hurricane Katrina. He graduated in 2007 winning the Best Portfolio in his graduating class. Following graduation, he was offered a Sous Chef position at “Delectables by Holly” where he worked until 2013. There he had the honor to meet and cook for celebrities and politicians such as President Obama, Hillary Clinton, Maya Angelou, Angie Harmon, Governor Pat McCrory, and former Mayor of Charlotte, Anthony Fox. In June of 2013 Phillip was offered the Sous Chef position at Southminster and has since been promoted to Chef de Cuisine where his passion is developing and testing new menu ideas. In his spare time, Phillip loves spending time with his dog Journey. Together, they like to hike, camp and hunt for waterfalls.
Meet Executive Sous Chef Marc Jacksina
Marc Jacksina, Executive Sous Chef, relocated to Charlotte from New York with his wife Lauren, and two sons, Lucas and Ian, in 2004. He has opened multiple Best New Restaurant award winners in Charlotte including: Nan & Byrons, Halcyon and Lulu. Marc has created a loyal following across Charlotte and beyond with his playful, narrative approach to food. A featured chef at the James Beard House in NYC, as well as the Food and Wine Festivals in Atlanta and Charleston, he has also appeared on Bravo TV’s ‘Life After Chef’, and in national publications like Bon Appetit, Southern Living, and Garden and Gun magazines.”
Marc is also a talented writer who regularly contributes to CharlotteFive, the Charlotte
Observer’s city guide to what’s happening in and around our city. He is also co-founder and host of OrderFire, Charlotte’s original culinary video web series. Each episode aims to get to know the area’s leading culinarians, mixologists, restaurateurs, purveyors and farmers.
